      Background

      To Whom it may concern Our names are Lottaya Palmer and Gael Le Pommelec, we are a French and English/Caribbean couple currently finishing our second season working at The Hut in the Isle of Wight. We are both very passionate chefs trained in cooking and pastry with a combined 35 years’ experience in the hospitality industry (Gael has been working 20 years in the field and it has been 15 years for myself). Our experience ranges from hotels (five stars), country clubs, catering companies, private chef work, schools, standalone restaurants (fine dining as well as traditional, casual etc.), concerts, ascot royal, and freelance chef work for special events and get togethers. We also have experience hosting friends and family. Gael and myself have experience in menu planning, costing, recipe development, budget management, ordering, and stock take as well as working in various sections of the kitchen, be it larder, grill, fish, pastry and the pass. In addition we have exposure to different cuisines ranging from Caribbean, Mediterranean, English, French, American, Mexican, Spanish, Italian, and Asian. These can also be made vegan as we have extensive knowledge and experience with vegan cuisine. We are looking for a winter season 2025/26.
